It is officially autumn! I know at the cost of sounding like every Basic Girl out there I will proudly state that autumn is my favorite time of the year. Everything from the changing leaves and the seeds falling on the ground to the new palette of comforting warm delicious meals at home.
The cooling temperatures don’t hurt either. I am not one for anything about 80°F or 26°C (if you’re not about Fahrenheit). Cozy sweaters and warm soup are my happy places! A lovely cocoa and book also does wonders for me. How about you guys? Are you more of a; “I need snow all year round” or a, “spring flowers blooming is heavenly”, there might also be a, “beaches all day every day so, bring the heat” out there. There is a place and necessity for them all, I can’t lie and say I hate warm days at the beach of an ocean or lake. I also can’t say that I don’t love having snowball fights with the family when there is feet of snow outside.
Now let’s get into the warm and cozy spirit for this super simple and easy to make your own Stuffed Acorn Squash!
15 Minutes Prep
30 Minutes Cooking
1 Acorn Squash
1/2 Sweet Potato
1/4 C Spinach
1/4 C Mushroom
1/4 C Sunflower Seeds
2 Tsp Rubbed Sage
2 Tsp Dried Rosemary
4 Tbsp Olive Oil
Salt & Pepper to Taste
Preheat oven to 350°F
Halve the acorn squash, 1/2″ cubes for the sweet potato, and slice the mushrooms.
On a baking sheet place your acorn squash skin down and flesh up. Use quite a bit more salt than you think you need to on just the acorn squash. and paint the inside with the olive oil.
Place the acorn squash in the oven for 15 minutes.
In a mixing bowl stir the rest of the ingredients and make sure you cover all of it in the oil and seasonings.
Poke holes in the acorn squash. Place the fillings in the acorn squash and the whole thing in the oven for another 10 to 15 minutes just keep poking the acorn squash till it is pretty soft.
TIP: If the acorn squash looks dry splash with water inside the acorn squash.
Go give this your own twist and in new flavors or veggies. Another option is try is to add in cranberries (will do this when I make this lovely dish again). Please let me know what you try the options are endless, I have also done this with cubed butternut squash, kale, cherry tomatoes, hemp seeds, chia seeds (at the end), and coconut sugar have been tried, all recommended!
Recently in a bathroom stall I saw some etching some of them actually legible writings and others more like my 4 year old sisters drawings. One of them said, “Don’t let this make you distrait, make this into inspiration! – 2020”
First I had to Google distrait then, thinking about it later let me build on it’s applications that. We can’t let every new thing distract us with unknown worry; we need to focus and highlight only our most necessary undertakings. This will always point each and every person towards what their next step should be without fail. If you have 1000 To Do items, there is actually only one thing you need to do to get you to your goals. Granted there are sometime house keeping things like laundry, dishes and it goes on and on. Do the one thing you need for moving your life forward first then in descending order of difficulty they will fall into place with who you want to be.
Then become inspired by the things highlighted for you of our world the good and the bad and allow yourself to process it. Mold what you want to happen into what you already perceive as your goal and your next step make them one thing. Do not allow them to become 17 little tasks that make you busy and not impactful and fulfilled.
Leave your mark on this world don’t let it parade around you without being apart of it.

There have been so many upgrades and simple removal of appliances from our house. Like that there is no technical heater. We did use some small $5 ceramic heaters from Walmart that two of them worked wonderfully during some of the build. Others; the fridge, water heater, tank were all replaced. Still to replace are the circuit breaker and update our in cabin fuse box. There were no fans or AC units just vents. The water pump was actually kept in great shape so, it is relatively the only kept appliance.

Dometic Brisk II Rooftop Air Conditioner this is going to be a game changer! With having worked on all of our electric, this will be one of our major upgrades! Replacing our currently just two fan design. (Neither working as of 07/25/2020) If you think you can handle simply two fans or just one fan. It’s not a good life.
Just our simple existing the summer for a few weeks now has been rough! Finding places where we can hide in AC or have the literal ocean breeze directly to the van have been our best conditions. Even Colorado low humidity and in the mid 90’s in the van turns to a total oven.
Friendly reminder to everyone with pets to have something to regulate the temperature outside for your little friends as well. Juliette is my service dog so she goes everywhere with me anyways but, for those who can’t have it that way. Please keep their health and safety as a HIGH priority.
We are only 19.5 feet from bumper to bumper so we don’t need two big AC units for our tiny home. We did decide that we love the splurge for the rain shielded Maxx-Air 00-05100K Maxxfan Ventilation Fan we did save by having the manual one just cause at any given point we are no more than 5 feet from it while in the house. With that rain shield though, we can have it on while driving and in the rain, without having to worry about it ever leaking or being ripped off.
All of our plumbing was out of date and the connections we had are now illegal, that was weird to find out. Kind of cool though to learn about all of these “used-to-be” residential engineering technology. To think in just two generation worth of people it would be phased in and out!
Anyways the newer worth the little bit extra is to use Pex Pipe! It will out last copper, can be made “malleable”, I use quotes only because it is only slightly malleable. There is some give to the material however it isn’t without work and probably easier to just add a few more connections for any turns or acute angle changes in however you have to lay your piping. Color coding is also exceptionally easy with this because it can be purchased in white, blue, and red. We only used the white and red because they were available in the larger sizes.
Then there are connection by a company called SharkBite! These will make your life so easy and they are supremely smooth and sealed connections. There are any and all possibilities from this single company as well; tee fitting, threaded to click-to-connect male and female, push-to-connect to push-to-connect, one way fittings, The pex pipe comes in at a half inch and the only part we had trouble with was that our water pump is metric, this piece is original to the RV. AT that we used a bit extra of our thread seal tape and with the SharkBite pipe fitting it is a perfect seal. Get imperial products ( a product that uses inches for the fittings) and you’ll be set though!
Now to the fun new toys of our home! The ECOTOUCH Electric Tankless Water Heater is so compact and fit under the sink with everything else like it was meant to be. We put a simple 1″x2″ board be hind it where we would be securing it and it was so simple to connect into our system. Can’t wait to utilize it for a nice warm shower after a cold hike or swimming through a lake in autumn. Anyone else a total day dreamer?
This has the 1/2″ threaded fittings that made it easy to simple put some thread tape on and screw on the SharkBite Fitting.
The new tank we got is a 45 Gallon tank, it was the biggest we could fit for the space we have. This is our RV 45 Gallon Fresh Water Holding Tank for Campers. I would recommend anything by RecPro, the manufacturer. Their products are simple, easy to work with and very well made. If you want to know how we fit that inside, more than happy to make a post dedicated to plumbing or how to make the most of your space.
The only things I would recommend is before measure how much water you use in three days minimum. If you clean, cook, drink or do any bathing in your van/RV it will go faster than you could possibly imagine. The only connection that are needed for a tank are a small vent tube that allows for your tank to breath based on elevation and temperatures. Another tube that is your gravity feed line, fancy word for how you get water to drain down to your tank. Lastly two connects for getting water out a quick release should be gravity fed as well, on the bottom of the tank, that is for emergencies or if you are going on a long trip and know you can fill when you get there. The other exit tube is to actually use the water in your tank! This should aim to be a 1/2″ connection to your water pump.
First off the only real upgrade we did here was to switch our fridge. A sink is a sink and can be made out of anything as long as it has holes in the right places for draining and a faucet. The stove/oven we kept as well it is extremely cute and still a fresh kind of vintage for our tiny home. Other than that we do cook a TON and have plenty of gadgets, bowls and spoons for serving a hotel but that’s not the point of this section.
The key things you need to think about before purchasing a fridge would be;
How often do you cook?
How much of your food needs refrigeration?
How much food do you cook?
How long does that last in your fridge?
How often do you want to go to the store?
What power sources do you have at your disposal?
After you have answered those questions you can figure out what your looking for. Always go for the most energy efficient you can weather it be from a single power source like a 15 amp basic outlet, a direct wiring in to your breaker box, if propane is something you can use, and how much power you will have to go to a fridge. DO NOT SKIMP on any of these steps. If you don’t have enough power you will be in a mess. If you are always going to the store and want to be able to go a few days it’ll be a hassle to move everything all the time. If you have a larger family needing more total volume, just because you have to cook for so many; you don’t want to have to go to the store all the time just because you can’t hold the basic amount for your family. Assure you’re thinking of these things.
Anyways back to what we decided would be a great choice for the two of us. We cook a lot of fresh food, and really don’t put anything besides damp rags in a freezer for cooling ourselves. We are also uncertain of our incoming power at all times. We didn’t have a slot for a direct connection to a breaker so our fridge has to be on an outlet. These all lead to our selection of a low amp, highly efficient 5.5 cubic feet electric, plug-in fridge that has a terrible freezer. I do recommend it in the regard that is 100% gets the job done, keeps cool even when the RV is approaching 100°F or about 37°C. If you want the freezer to freeze anything at that point though it starts freezing anything that’s within an inch or two below the freezer drip pan.
Whatever you do, it won’t be perfect. It will be made possible by your decisions and the world can be changed for the better by any number of decisions you make today. Always try to brighten someone else’s day.
Take charge of your life and make your dreams into a plan with action behind it. See anything you want to through, stumble, fall down and get back up. If doors are closing and it’s to redirect you to what the universe sees possible of you and at the end of the day be happy and grateful for something or someone in your life.
This is a great summer staple, just for a fresh filling, nutrient dense, low calorie dish! After going gluten-free, and being a serious lover of bread and noodles, this dish solves so many cravings for pasta. As well as other alternatives like Barilla Proteins Pastas they are made of grains like lentils, edamame, chickpeas, etc. I love the new textures and how filling they are!
Trying to fuel Anthony and myself with the healthier foods and cleaner foods is a goal for the year. Seeing how we can switch and still satisfy cravings of sweets, pastas, fatty or fried foods. There have already been so many changes in how we feel for our minds and bodies. How we can think, move and motivate easier. Definitely think it is important to fuel yourself and your family with clean, good for them foods. I truly believe that it would bring in things you wouldn’t begin to think about to your family. I am no nutritionist or dietitian, I can only speak from personal experience.
To the food we’ve all been drooling about! I meant dreaming about! This is a simple dish to make out of again a handful of veggies, some sun dried tomatoes and olive oil. You can achieve all aspects of a healthy diet in this meal easily as well. Getting in enough healthy fats when you go vegan or simply dairy free can be difficult. I find that avocados, olive oil, and nuts can help you attain any of these goals! Protein is kind of easy with this meal as well, all of the veggies and the nuts in the meal will culminate into a healthy amount for each meal. I recently found out that there are 29 G of protein in a cup of sunflower seeds, 4 G of protein in an average avocado and (I tend to use a medium zucchini per bowl) 3 more grams of protein in a medium zucchini!
Now let’s get to the food! I would recommend adding the seeds, we put them on before the sauce thinking it was thinner…we were wrong. Will update the photos when we inevitably make the dish again in the next couple of weeks.
1 Medium Zucchini
1/4 C Kale
1/4 C Spinach
1/4 C Red Cabbage
1 Whole Carrot
3 Tbsp Sun Dried Tomato In Oil
2 Tbsp Hemp Seeds
1/4 C Sunflower Seeds
2 Tbsp Olive Oil
1 Tbsp White Vinegar
Salt & Pepper
Wash all the veggies, and it’ll be best if you have a mandolin, spiralizer, cheese grater, something. If you don’t a tip for this is if you only have your hands and a few really good knives; take a straight edge knife preferably a chef’s knife and cut the zucchini in half then cut that horizontally into thirds and then make your thin strips vertically to the zucchini. Then, NOODLES!
With the carrots, cut them into 1/4 in rounds. The spinach, kale and red cabbage slice into 1/2 inch pieces.
The sun dried tomatoes, place in a bowl and mix with oil, vinegar and salt and pepper to taste mix then, your ready to throw everything into the bowl.
Place noodles then, top with kale, spinach, red cabbage, and carrots. Next is the sauce and nuts and finally slice up that yummy avocado to add in a creamy feeling to this amazing dish!
If you are looking for more to add to the dish I would highly recommend some red onion, mushrooms, bell peppers, yellow squash noodles as well would be great additions!
If you don’t have sun dried tomatoes I would recommend; doubling the oil, diced roma or garden tomatoes, some minced garlic and stir in a bowl as stated before.

I know it sounds a little weird but, once you give it a try you’ll be in love with this dish too! Can easily be made protein rich and gluten-free as well! Double win! There are tons of additions that would amazing to make to this dish! For what we have available on the van though till our electrician appointment there were some corners that were cut. Like adding yellow onion, garlic to the sauce and only using half a can of tomato paste and black beans in the sauce would have been great. Using some fresh herbs and some more citrus would also have been amazing! No refrigeration is putting some limitations on supplies though.
Still loving the progress being made on the RV everyday, improving bit by bit. During quarantine building the RV was an amazing opportunity to have and to now be able to completely live in her is lovely. That being said anyone who knows a master electrician please email or comment and I will answer immediately.
Now let’s get to the food! An easy way to add protein and make the dish gluten-free is to use lentil pasta instead of wheat pasta. This was also great for a new flavor in the dish than I’ve had before.
American Take on Mexican
1 Box Red Lentil Penne Pasta
1 Can Black Beans
1 Can Corn
1 Can Tomato Paste
1 Whole Bell Pepper
1/4 White Onion
2 Clove Garlic
Few Sprigs Cilantro
2 Tbsp Lime Juice
1 Tsp Chili Powder
1 Tsp Cumin
1 Tsp Oregano
1/2 Tsp Paprika
Salt and Pepper to Taste
In one pot start the water for your pasta, add in some olive oil and salt and pepper to the water.
Then, rinse and start dicing all of the veggies and mincing the garlic finely. In a second pot start an oil of your choice only like a couple tbsps worth with the seasonings, onion and garlic.
When the onions are clear toss in the drained and rinsed black beans and corn, as well as the other veggies and tomato paste.
The water should be boiling now so add in your red lentil pasta and turn of the heat and cover. Leave that to sit for about 15 minutes that should be about the same time it takes for the rest of the meal to be finished.
TIP: when the pasta finishes cooking transfer about a 1/2 C of the water to the second pot so that the starch water help the sauce adhere to your pasta better.
Drain the rest of the pasta add to the pot and stir then add in the lime juice and cilantro.
Leave a few leaves of the cilantro for a nice touch when plating and enjoy!
I have fallen in love with this dish for it’s protein content and gentle flavor. Having a sensitive stomach now has put a strain on how spicy food can be and this could work out wonderfully for you and yours that may not love spicy food or if you do, add some green chilies to the mix and possibly an enchilada sauce instead of making your own sauce.
I would love to try this with a creamier twist, comment if you would love to hear how that would turn out!
With all that is going on this year, I want to ask each person to tell their loved ones how much they care. To not let doubt and fear get in the way of supporting others and using your voice, your resources and your hands and mind to begin genuine change for better.
It doesn’t matter where you are or who you are. You can become something bigger than yourself whenever you choose to. When you begin to grow as an individual you also grow for all those around you, you can begin the journey right now. Not tomorrow, don’t wait, begin where you are and aspire for more than you could ever imagine.
One of the easiest meals to make, if you have left over veggies of any kind you can throw this meal together. Make this meal however you want! Want some grains in it quickly boil some quinoa for a protein packed, well balanced addition to the meal. Not a quinoa fan, chickpeas, black beans or brown rice also make for great bases!
When preparing to move into the RV full time we didn’t have all of our electric figured out and this was a great way to use up all of our veggies. Not even thinking twice all of the veggies got rinsed, chopped, thrown on a baking sheet with olive oil and seasonings and then came out a glowing perfect lazy night dinner. We had kale, carrots, sweet potatoes, red onion, bell pepper, spinach, tomatoes and cherry tomatoes. Worked really well for a balanced meal as well with some great sources of healthy fats and proteins, especially after topping it off with some seeds and an avocado! If not using literally every bit of the food you have to only feed two people I would recommend putting it on a base of grains or beans.
If you are just wanting some whole foods as well these are always a great option. Try keeping it colorful and incorporating all of the colors for a well rounded meal full of vitamins and minerals!
There are so many variations that could be utilized out of this. I also love that it helps keep our food waste down. Anthony and I are working on being more conscientious of our foot print, one way is to work on food waste and composting what we can’t eat. Another way we like to keep it down is to not use the plastic bags for produce in supermarkets and farmers markets. To use reusable bags and as little packaging as possible. Does it drive anyone else insane that the supermarket HEAT PLASTIC WRAPS fruit, whole oranges and apples!
Trying to find more ways we can get spring mixes and such without packaging has been difficult although we are on course to begin using Aerogarden Harvest for a garden mix as well to start up more fresh herbs and peppers!
1 Whole Red Bell Pepper
2 Medium Sweet Potatoes
2 Cups of Kale
2 Cups Spinach
1 Whole Roma Tomato
Handful Cherry Tomatoes
1/2 Stick Avocado Butter
1/4 C Olive Oil
1 Tbsp Garlic Salt
Salt and Pepper to Taste
Wash all of your veggies and preheat your oven to 375°F or 190°C
Dice the pepper, sweet potato, and roma tomato then, halve the cherry tomatoes.
Take a baking sheet lay down aluminum foil or a silpat and coat in some of the Avocado Butter, place down all of the veggies (for only making the kale and spinach crispy I suggest waiting till the last 10 minutes or so of baking to put them in on top), drizzle the olive oil over all of the veggies and garlic, salt and pepper to taste and cook till the sweet potatoes are tender about 20 to 30 minutes depending on size and moisture.
Then top with a 1/2 an avocado sliced on top and a drizzle of olive oil again! Enjoy!
For new flavors try mixing up the meals! Top with seeds, different oils, try baking with sesame oil and rice vinegar for an extra flair, also the different bases will allow you to individualize for dietary needs. Quinoa I would suggest for an excellent addition for a complete super foods bowl! A touch of lemon could also be an excellent brightening feature to the flavor.
Please as with every entry I would love for you to take a moment to simply think about ways to improve your daily habits to improve yourself for yourself. How if you feel better those around you will, they will in turn effect others, and so forth till the world is better because of the changes you have made for yourself.
Beginning the process is thinking, to acknowledge what you wish to improve. If that is the thoughts you are having, the feelings you have, the meals you have or if your are further along in the process and thinking about how to go zero waste for yourself and your family or if you are creating a gold-leed building for a city as part of the city planning and architecture something department. I can hope all of us find our callings and can leave the world a better place than we started with. Every one is where they are meant to be in their journey and everyone has the ability at every moment to change where they are and where they are going!

The Easiest (looks complicated) Dish Ever, Veggie Loaded Ramen! With a passion for learning how to make more authentic dishes working with Ramen has been one of the most challenging to work with, creating a true broth base for it takes time and refrigeration we don’t have at the moment. That being said, making this dish quickly and to make everyone happy can be done with ease.
It is by far one of the best meals I have had since going vegan. There is an insanely easy way to make this dish taste like everything good about going to take-out Chinese restaurants!
Since cutting out eating out as well as going gluten free it is 1000x easier just to make our own dishes! This being said if anyone knows of a place that is vegan, soy and gluten free, let me know in the comments! Or email, DM, text, call, or start sending smoke signals immediately! I need to know that they are real.
Anyways, off that rant. So much better for you and your families physical, mental and spiritual health to take into account what each of you are putting into your body to create your physical self, in turn programming your mental state effecting your spiritual being. Fuel your beings with as much of the positivity this world can offer you and yours. It will improve so many aspects of your life!
Since working on this transition to less processed vegan foods as well, there have been so many other changes that have occurred. My mental state has gotten clearer, my thoughts can be focused easier. I am hoping that this can be shared with others for ideas and instilling the idea of the opportunity for your brains and bodies to get a dose of the right stuff.

Veggie Loaded Vegan Ramen
3 Tbsp Better Than Bouillon Vegetable Broth
3 C of Water
1/4 C Sesame Oil
1 Clove Minced Garlic
1/4 Yellow Onion
(If wanted, 2 tbsp honey is amazing)
1/4 C Soy Sauce
1 Whole Star Anise
1/2 16 oz. package of Firm Tofu
1/2 of a baby bok choy
2 Whole Carrots
1/2 C Sprouts (Alfalfa tastes pretty good)
1 Dried Sea Weed Sheets or 1/2 box Snack papers
2 Green Onion
1 C Mushrooms
2 C Spinach
2 packages of Ramen Noodles
Prep: Drain and cut your tofu press all of it immediately after and then marinade 1/2 the package in 1/2 C soy sauce, 2 tsp paprika, 1 tsp garlic powder and 1 tsp ground ginger.
In a sauce pot saute onions and garlic in sesame oil, once they have caramelized add in Star Anise, Honey and Better than Bouillon Broth and water. Bring to a boil.
While that is boiling 1/4 to 1/2 inch; slices of bok choy, shred the carrot in a food processor no to paste but to a fine stranded cut, slice the green onion into 1/4 inch pieces, finally top down cut the mushrooms.
When it boils toss the tofu, bok choy, spinach and mushrooms into the pot. Let that simmer for about 15 minutes then, add in the Ramen noodles and while that is finishing up start plating like a boss and layer some of the sprouts and carrot cuts into a piece of seaweed and roll it to top off the dish.
Take the Star out of the pot, place the soup into two bowls, top with rest of the veggies and sea weed wrapped veggies to look like the date night boss!
This is a dish I love to help others with because there is little room for error, go experiment with flavors with dish, a touch of fresh ginger is great make sure you remove it before serving though! Can become quite spicy.
Sriracha is also another one my family loves to add to the dish with a dash of chili powder for a bit more of a spicy take on the dish. With such little touches widening the spectrum of the meal I am still in love with it every time!

This is a great staple for vegan breakfasts and the base for a lot of variations as I try more, letting you know which ones are good for some variety and which ones are the actual bees-knees.
I love how refreshing these are in the morning and the perfect set up for one is a good sweaty gritty workout, cold shower, and then a bowl of just pure nutrients and whole earthy goodness ( I don’t think I could sound more like a hippie now if I tried).
This is also great if you thought your bananas would be great to last the week and they are ripening quickly due to van heat. So you know, everyone should have a reason for doing the things they do. They should have intention in moving forward and bringing your culture and mentalities to where they need to be for the human race to thrive together not just survive together.
If that is through minimizing your food waste and influencing your family and the generations they will create to do the same and for those generations to teach their own and others more to build a better future for all of us.

The base for Berry Banana Smoothie Bowls is always easy, to have them be chilled and refreshing try to freeze or purchase flash frozen fruits to replace ice that will thin out the bowl, fresh and frozen bananas and then some raw almond or cashew milk will make them liter on the calories as well as fresher.
Berry Banana Smoothie Bowl Base
1 C Frozen Banana
1 C Frozen Mixed Berries
1/2 C Milk of Choice
2 Tbsp Almond Butter
Place in blender, go for it! If you want a smooth consistency go for about 20 seconds on high. Want a bit of texture to it pulse at your own desire. Then you’re done son! Enjoy that refreshing mouth watering, nutrient rich, guilt free bright breakfast.
In need of a satisfying DESSERT! You heard that right, dessert out of breakfast! Use coconut milk lite or regular the healthy fats will make the dish extra creamy, also the use of raw cacao nibs would be the perfect bitter-sweet taste to this amazing bowl.
Wanting more protein? Top with more nut butters, raw nuts of any and all kinds, and/or hemp seeds. Pea protein powder in the mix would also do for extra dose of yummy goodness in anyone’s bowl!

General topping I always go for; shredded raw unsweetened coconut, almonds and walnuts, almond or peanut butter, hemp seeds, fresh strawberries and bananas!

Here is how to make the best Fried Orange Tofu with the bonuses of it being just a little spicy, extra crispy and so satisfying!
Since going vegan I miss orange chicken from panda express like nobody’s business, I know, I am classier than the Queen Elizabeth sometimes. Totally kidding, she could carry her self with more grace in a single step than I have my entire life.
Here are some tricks to frying tofu;
Always press the tofu for at least 45 minutes to get most of the extra water out. If you have the time press your tofu for an hour and then marinade for 30 minutes.
Pat the tofu dry with a paper towel after the marinade. It’s just a tiny bit of moisture after the pressing but it makes a world of difference for the end result.
Make sure you have plenty of oil in the pan and have it crackling before you place the tofu in the pan. This is just enough heat to fry the tofu without burning everything in the process.
4 Tbsp Honey (Agave should work as a substitute, will confirm later)
4 Tbsp Gluten-Free Soy Sauce
For the Fried Tofu
Cut Open Tofu and drain of packaging water. Then cut the blocks into 4 manageable chunks of Tofu for your press. Also placing the tofu in a plate with a heavy pan on top works pretty well. Let it sit for 30 minutes then empty water and add more weight or tighten the press for another 30 minutes.
Finish cutting up the tofu into bite-sized (one inch cubes) and set in a bowl for marinading. Splash in the soy sauce, salt, pepper, and drizzle some sriracha in there and then mix without hurting the tofu. Let sit for 30 minutes.
While Marinading start mixing together the breading. One bowl of 1:1 Almond Flour and Tapioca Flour, one bowl of Just Egg, and then another bowl of nutritional yeast and gluten free plain panko. Dip the tofu through these bowls and make sure each piece is well covered in each mix before proceeding.
When your coconut oil is crackling and ready for the tofu, keep a good eye on it for rotating to evenly crispy all sides.
For the Orange Sauce
In another pot sweat some garlic and onions in a splash of coconut oil.
Add in everything else, but the Pineapple.
Wait until it is as thick as you want it to be, if you are looking for a bit more thickening add in LIGHTLY some tapioca powder.
Make a hole in the sauce to sear the pineapple a little then stir together and you’re good to go!
Here you can see we had it with some lightly season coconut rice and steamed veggies! What else is better for utilizing the last of the bok choy from Ramen night than this amazing dish!

There will be an entire mural going up on the ceiling of sunset and sunrise with a beautiful land and seascape to each side. Can’t wait for the progress on that! Probably will end up being a month long release of pictures.
Here is the start of the mural this is the sun set side with the mountains, a few waters falls into a lake and eventually rolling hills and a field for a small barn and windmill.

Hey, my name is Heather and the cool hippie by my side is Antony. We are in this journey together now. Setting off on our voyage across the world in a 1982 Chevy Transtar. If you have never heard of this vehicle before it’s because all information on this RV seems to have vanished off the face of the Earth. Finding this vehicle in February 2020 and commencing a full remodel as of April 2020 giving us plenty of time during Quarantine to personalize and customize every square inch of this vehicle inside and out. Beginning our journey here seems to be perfect. This build with all of its pandemic stresses has been fun now we can’t wait to tackle the world.

Living in places of abundant wealth as well as areas of the highest poverty, drug use and homelessness in the nation gave me the well rounded foundation I needed.
My Mission is to now help those who need it most, in the best way I know how to; providing information and education. To instill the power to take hold of your own life the best you can and never lose faith in it. I have learned to be as selfish as I can, that how people are taught selfish is negative when it could never be better. To be selfish to the most extreme meaning of the word. Learning that when someone is selfish they should be so wanting of everyone to be them, so wanting of the world all of its plants, animals, air and water to be of the best quality. For the cosmos to be theirs and for it to have the best energies and vibrations for prosperity of the self and all the selves.

This was said at the passing of a college of mine. He was a person who was going to do amazing things with his life and already was, at the announcement that he was going to be a father he changed who he was that instant to who he had to be for his little one. Showing others, they have the ability to do the same. This is my daily motivation to wake up every day with a breath of fresh air to change the world as he saw to.
By providing other with drive, hope, resources and knowledge I can then, see the world shift for the betterment of all. To teach others to care for all as their own and for them to teach their own how to care for the world. Maybe in a few generations this place will be showing some actual compassion and patience with all.
